No time to bake that perfect delicious and fluffy holiday cookie? Try making cake mix cookies! Just three ingredients and you have a bakery quality treat, that no one will know cake from a box of cake mix!
Preheat oven to 375 degrees F
Mix all ingredients together. Feel free to mix in food colouring, your favourite extracts, and/or sprinkles or chips! I added almond extract and red food colouring.
It's best to mix it all with a spatula. The mixture will become sticky, and really thick as you combine...this is normal. I actually used my electric mixer to speed up the process, but part way through had to switch over to a spatula because the thickness of the batter was too much for my hand mixer to handle.
After it's completely and thoroughly mixed you'll want to scoop out small teaspoon size amounts and drop it with the aid of another spoon into a bowl of icing sugar. Try to avoid touching the batter with your hands...it's really sticky and won't come off your hands without rinsing.
When the teaspoon amount of cookie batter is dropped in the icing sugar...use your spoon to coat it in the sugar. When it's covered in icing sugar, you can pick it up with your hand and using a "rolling dice" motion over the bowl of sugar you'll form a cookie ball and remove any excess icing sugar.
When the ball is formed, drop it onto a baking sheet lined with parchment paper. Space balls evenly as they do spread a little bit while being baked.
Bake at 375 for 7-9 minutes. In my electric oven I found 9 minutes was needed, but if you're cooking with gas you may find 7 minutes to be perfect.
When finished, let the cookies cool on the parchment paper lined baking sheet before removing.
These cookies are soft and stay soft when they're sealed in an airtight container. Because they're soft they crumble/ smush easily so keep that in mind when packaging them as gifts!
